 ### **Mango Dry Fruits Kulfi (Summer Special)** A refreshing combination of **mango, nuts, and kulfi-style ice cream**, perfect for summer! --- ### **Ingredients:** #### **For Kulfi Base:** - 2 cups full-fat milk - 1 cup heavy cream - 1 cup mango pulp (fresh or canned) - 1/2 cup condensed milk - 1/4 cup milk powder - 1/4 teaspoon cardamom powder - 1 teaspoon saffron strands (soaked in 2 tbsp warm milk) #### **For Dry Fruits Mix:** - 1/4 cup almonds (chopped) - 1/4 cup cashews (chopped) - 1/4 cup pistachios (chopped) - 2 tablespoons raisins - 1 tablespoon ghee --- ### **Instructions:** #### **Step 1: Roast the Dry Fruits** 1. Heat **ghee** in a pan and roast **almonds, cashews, and pistachios** until golden. 2. Add **raisins** and cook for **30 seconds** until they puff up. Set aside. #### **Step 2: Make the Kulfi Base** 1. In a saucepan, **boil full-fat milk** over medium heat, stirring frequently. 2. Add **milk powder, condensed milk, and saffron milk**, and mix well. 3. Simmer on low heat until it thickens slightly. 4. Add **cardamom powder** and let it cool. #### **Step 3: Add Mango & Freeze** 1. Once the kulfi base cools, mix in **mango pulp** and **roasted dry fruits**. 2. Pour the mixture into **kulfi molds, matka (earthen pots), or a container**. 3. Cover and freeze for **6-8 hours or overnight**. 4. Dip the molds in warm water for a few seconds, then **unmold and enjoy!** --- ### **Variations to Try:** ✅ **Mango Malai Kulfi:** Add **1/2 cup fresh cream** for extra creaminess. ✅ **Kesar Mango Kulfi:** Increase **saffron** for a royal flavor. ✅ **Mango Coconut Kulfi:** Add **1/2 cup grated coconut** for a tropical taste.
