It’s best served warm with custard or ice cream! #### **Ingredients** **For the Pudding:** - 1 cup granulated sugar - 2 tbsp butter (room temperature) - 1 egg - 1 tbsp apricot jam - 1 cup all-purpose flour - 1 tsp baking soda - 1/4 tsp salt - 1 cup milk - 1 tbsp vinegar **For the Sauce:** - 1/2 cup heavy cream - 1/2 cup butter - 1/2 cup sugar - 1/4 cup hot water - 1 tsp vanilla extract #### **Instructions** ### **1. Preheat & Prepare** - Preheat your oven to **180°C (350°F)**. - Grease a **baking dish** (8x8-inch or similar). ### **2. Make the Batter** - In a mixing bowl, beat together **sugar, butter, egg, and apricot jam** until light and fluffy. - In a separate bowl, whisk together **flour, baking soda, and salt**. - In a small cup, mix **milk and vinegar** (this makes buttermilk). - Alternately add the dry ingredients and buttermilk mixture to the sugar mixture, mixing until smooth. ### **3. Bake the Pudding** - Pour the batter into the greased dish and bake for **30-35 minutes**, or until a toothpick inserted in the center comes out clean. ### **4.
