 ### **Kulfi-Style Dry Fruits Ice Cream (Indian Matka Kulfi)** A dense, creamy, and flavorful **kulfi-style dry fruits ice cream** that brings the taste of traditional Indian kulfi! --- ### **Ingredients:** #### **For Kulfi Base:** - 2 cups full-fat milk - 1 cup heavy cream - 1/2 cup condensed milk - 1/4 cup milk powder (for extra creaminess) - 1/4 teaspoon cardamom powder - 8-10 saffron strands (soaked in 2 tbsp warm milk) - 1 teaspoon rose water (optional) #### **For Dry Fruits Mix:** - 1/4 cup almonds (chopped) - 1/4 cup cashews (chopped) - 1/4 cup pistachios (chopped) - 2 tablespoons raisins or chopped dates - 1 tablespoon ghee --- ### **Instructions:** #### **Step 1: Prepare the Dry Fruits** 1. Heat **ghee** in a pan and roast **almonds, cashews, and pistachios** until golden. 2. Add **raisins** and cook for 30 seconds until they puff up. Set aside. #### **Step 2: Make the Kulfi Base** 1. In a saucepan, **boil full-fat milk** on medium heat, stirring frequently. 2. Add **milk powder, condensed milk, and saffron milk**, and mix well. 3. Simmer on low heat, stirring occasionally, until it thickens slightly. 4. Add **cardamom powder and rose water**, then remove from heat. #### **Step 3: Combine & Freeze** 1. Mix the roasted dry fruits into the kulfi base. 2. Pour the mixture into **kulfi molds, matka (earthen pots), or a regular container**. 3. Cover and freeze for **6-8 hours or overnight**. 4. Dip molds in warm water for a few seconds, then **unmold and serve!** --- ### **Variations to Try:** ✅ **Mawa (Khoya) Kulfi:** Add **1/2 cup grated mawa (khoya)** for a richer taste. ✅ **Chocolate Dry Fruits Kulfi:** Add **2 tbsp cocoa powder** for a chocolate twist. ✅ **Coconut Dry Fruits Kulfi:** Add **1/2 cup grated coconut** for a tropical flavor.
